Welcome to this little corner of Loveleaf Co. where every last Thursday of the month, I post ten of my favorite finds, meals, memories, and everything in between from the past 30 days. ✌🏼
On repeat this month! Black bean zucchini bowls with chipotle-tahini sauce. So easy and totally adaptable to whatever vegetables, grains, protein you have on hand (don’t skip the sauce though;)). And if you need more ideas for using up zucchini here are 10 easy, healthy zucchini recipes.

Josh and I spent a few weeks visiting my parents on Long Island this month – we had a few beach days, I read Untamed (highly recommend), we watched all three seasons of Selling Sunset (… I swear it’s good), and did lots of Peloton yoga (even if you don’t have a bike, you can use the app!). Summer forever, please.
This month, I posted something I’ve wanted to write about forever: the five best healthy fats and oils for different types of cooking (roasting, sautéing, and baking). I’m breaking down which fats and oils are safe to cook with, which you should never heat, and my favorite brands. Read the post here.
I’m not the only one who’s been wearing the same thing every day this summer, right (RIGHT?). A combination of social distancing, working from home, and finding the most comfortable linen romper ever has me looking like this… every single day.
Because I don’t have a grill (hi, NYC living), I’ve been on a veggie burger kick. These peanut edamame burgers are one of my favorites – make them ahead for the week (think: burger bowls, lettuce wraps, etc.) or double the recipe and freeze some for later. Get the recipe here.
Josh and I celebrated our 4-year anniversary this month! I went down a rabbit hole looking through photos from our wedding and honeymoon (Italy) and ….😭. Best day ever.
Instagram released Reels this month and here’s my first one! The simplest recipe ever: toast + summer tomatoes + mayo (I love this avocado oil mayonnaise).
My desktop files got really out of hand this summer. So – I organized them! With the help of Vivere Co., I deleted all files I no longer needed, organized the files I wanted to keep, and then cleared my desktop. So satisfying. I also organized my iPhone home screen too.
My new favorite way to cook tofu! All you need is coconut oil, garlic powder, nutritional yeast, salt, and tofu – see how I make it right here. Also: these silicone baking mats are a clean-up game-changer.
This month, I posted my favorite coconut cauliflower rice recipe – the perfect low-carb base or side dish for quick and easy weeknight meals. This version is so good because the richness of the coconut milk makes it more substantial (read: a more worthy rice substitute, in my opinion). Get the recipe here.
Summer isn’t summer without ice cream. Josh and I went to Van Leeuwen, which is a quick walk from our apartment in Brooklyn, and I got their vegan cookie dough. So good.
I don’t know much about skincare, but I’m trying! At the recommendation from my friend Katie from Green Product Junkie, I got this One Love Skin Savior balm and I’m obsessed. I use it to take off eye makeup and then put it on my face at night (my skin tends to be on the drier side).
