Avocado toast is simplicity at its best. Add a little curry coconut crunch and it becomes next level (without any extra effort). Don’t have coconut crunch? Use lightly toasted coconut chips and sprinkle with your favorite seasoning. Enjoy this avocado toast for breakfast with some eggs or as a simple afternoon snack… or both (no judgment here 😉 ).

Gluten-Free Avocado Toast with Curry Coconut Crunch

Description

This avocado toast with curry coconut crunch is the perfect healthy breakfast or snack, full of flavor and texture. Made with gluten-free toast and vegan.


Ingredients

Scale
  • 4 tablespoons toasted coconut flakes (see notes)
  • 1/2 teaspoon curry powder
  • 2 pieces of gluten-free bread, toasted (this brand is one of my favorites)
  • 1/2 avocado
  • salt and pepper to taste

Instructions

  1. In a small bowl mix together the toasted coconut chips with the curry powder to make the curry coconut crunch.
  2. Mash 1/4 of an avocado on each piece of toast. Sprinkle each piece with two tablespoons of curry coconut crunch and sprinkle with salt and pepper.


Notes

To make toasted coconut flakes, arrange unsweetened coconut flakes evenly on a baking sheet and bake at 325 degrees F for 5-10 minutes, stirring halfway through. The flakes will toast very quickly, so watch carefully! The flakes will get crunchy as they cool.
