✨ TIPS FOR A FROSTIER, THICKER SMOOTHIE BOWL ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Smoothie bowls > smoothies because: toppings (agree or disagree?). Some tips to make it soft-serve consistency👇🏼
⠀⠀⠀⠀⠀⠀⠀⠀⠀
» Use frozen fruit instead of fresh. Frozen bananas are the creamiest, but you can do a blend of banana + other frozen fruit like berries. Blend the frozen fruit FIRST into small bits, then add the liquid and other ingredients.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
» Use as little liquid as possible. I like to start with just a few tablespoons of liquid and add more from there.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
» Add 1/2 cup (or more!) of frozen riced cauliflower. You can’t taste it and it makes it extra frosty.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
» Add in a thickening superfood like 1 tablespoon chia seeds or flaxseeds.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
» Add in a healthy fat, like nut or seed butter, avocado, or flaxseed oil.

LEMON COCONUT ENERGY BITES
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup raw cashews
1 cup unsweetened shredded coconut
1/4 cup gluten-free rolled oats, plus more if needed
zest of one large lemon
juice of half a lemon
1/2 teaspoon pure vanilla extract
2 tablespoons pure maple syrup
pinch of salt
extra shredded coconut for rolling
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Place all ingredients, except the extra coconut, into a food processor in the order listed and blend until the mixture becomes crumbly and a bit sticky. Process with more oats if mixture seems too wet. Use your hands to shape the mixture into 15 balls. Roll the balls in the extra coconut and place in the fridge to set. Keep refrigerated until ready to eat.
