If you grew too much zucchini this year – or bought too many at the farmers’ market (hand-raised), here are 10 healthy, easy zucchini recipes for you to try before fall sets in.

If you follow me on Instagram, you know that my latest zucchini dessert experiment was a #fail. So…while I’ve got you covered with the easy savory zucchini recipes, I’ve included a few sweet zucchini recipes from some of my favorite food bloggers who are much better at baking than I am ;). Enjoy!

Banh-Mi Inspired Bowls with Zucchini Noodles

Prep-ahead bánh mì inspired bowls, Loveleaf-style ✌🏻(read: ditched the bread + added lots of veggies). With zucchini noodles, my go-to dairy-free pesto, and (freezable!) baked turkey zucchini meatballs.

Gluten-free zucchini fritters! If you like goat cheese (I do!), you’ll love these easy fritters. Serve them as a main dish with your favorite sauce or as a side to grilled protein + veg for an end-of-summer meal.

Paleo Zucchini Bread

I love this easy, healthy paleo zucchini bread! Made with simple, recognizable ingredients and relatively low in sugar for a dessert. While the recipe says the chocolate chips are optional… I think they’re a must.

I make these turkey zucchini meatballs almost 1x per week… and not only in the summer. They’re the perfect prep-ahead protein for salads, grain bowls, pesto zucchini noodles, bánh mì inspired bowls, etc. So easy and flavorful.

Black Bean Zucchini Bowls with Chipotle-Tahini Sauce

I make some version of these black bean zucchini bowls almost every week in the summer. Made with black beans and quinoa (a plant-based protein power combo) and a creamy, dairy-free chipotle-tahini sauce these bowls are super satisfying and affordable to make.

Dessert for breakfast! As someone who prefers sweet over savory for breakfast, these zucchini muffin cups are a dream come true because: sneaky veggies. Sweetened with banana and a little maple syrup, these are also naturally gluten-free.

Healthy Chicken Parmesan

This recipe is so easy and satisfying. If you’re gluten-free, simply use gluten-free breadcrumbs. If you’re dairy-free, this is my favorite dairy-free mozzarella cheese. If you’re new to zucchini noodles, here’s my guide to making zucchini noodles or use store-bought to make the recipe even faster.

I think the photo says it all. These are the best zucchini brownies – and they’re gluten-free and paleo too! Made with tahini (don’t knock it until you try it), so you know these have a special place in my heart.

If you love lemon and garlic, this salad is for you. It’s so easy to make and satisfying in all the right ways: healthy, crunchy, flavorful, and light… but substantial enough to be a full meal when paired with your favorite protein (I like grilled chicken or tofu!).

These feel-good zucchini muffins are one of my favorite zucchini recipes. Sweetened with dates (!) and pure maple syrup, these muffins are also gluten-free which means only one thing… dessert for breakfast.
