A Peek into November’s Meal Prep Box!
This month’s box is full of seasonal goodness. Cozy Ethiopian lentils, a roasted veggie bowl with hemp seed ranch dressing (that’s actually good for you), a Thanksgiving-worthy wild rice salad (double it for a crowd!), and – since too much pecan pie is inevitable – a post-Thanksgiving crunchy detox salad with tamari-roasted pumpkin seeds.
And because fall = pumpkin, we added in two of our favorite recipes: healthy pumpkin spice bites for an easy prep-ahead snack and a warming (anti-inflammatory!) pumpkin turmeric spice latte (turmeric powder included!). Spicy and sweet, it’s a fragrant spice blend used in Ethiopian cooking. “Berbere” literally means “hot;” perfect for cozy fall cooking. Used in the Berbere Lentil Bowls with Ethiopian Collard Greens recipe.

TAMARI-ROASTED PUMPKIN SEEDS
