If you’ve never tried coconut butter* before, your life is about to change for the better. Not to be confused with coconut oil, coconut butter is made from ground coconut meat.(Think: almond butter vs. almond oil). It’s creamy and rich with a butter-like consistency, full of fiber, and packed with healthy nutrition.

Coconut butter contains medium-chain fatty acids, which the body burns for energy more efficiently than long-chain fatty acids, making this magical coconut butter bark the perfect snack. Lauric acid, present in coconut, has been shown to boost immunity and medium-chain fatty acids may reduce the risk of some diseases like diabetes, osteoporosis, and even cancer.

This magical coconut butter bark takes just a few minutes to make and is the perfect satisfying snack or sugar-free (!) dessert. I topped the bark with chopped dried mango, pumpkin seeds (zinc!), and dried goji berries (antioxidants!), but any toppings you like will work here. Frozen raspberries are another favorite topping of mine. Enjoy!

Magical Coconut Butter Bark

INGREDIENTS

  • 1/2 cup coconut butter (aka coconut manna)*

  • 1/4 cup toppings of choice (like dried mango, pumpkin seeds, and goji berries)

  • sea salt

INSTRUCTIONS

  1. Line a rimmed baking sheet with parchment paper. The coconut butter needs to be soft enough to stir and pour. If it isn’t, gently heat the glass jar (without the lid!) in a microwave for a minute or so OR put the jar (with the lid on!) into a bowl of warm water to soften. Stir the coconut butter until it’s smooth and creamy. You don’t want the coconut butter to be liquid, or it will spread too thin. You’re looking for a thick, smooth consistency that can pour and spread, but not run.

  2. Pour 1/2 cup softened coconut butter onto the parchment lined baking sheet and use a spatula to spread it evenly to about 1/8 – 1/4 inch thick. While the coconut butter is still soft, sprinkle with 1/4 cup toppings of choice (like dried mango, pumpkin seeds, and/or goji berries) and a sprinkle of sea salt.

  3. Transfer the baking sheet to the fridge or freezer. Chill for 30 minutes before breaking into pieces of desired shapes and sizes. To store, keep the pieces in an airtight container in the fridge or freezer.
