Enter: sweet potato toast. Made from simple slices of sweet potato, they’re blank canvases just waiting for you to top them with all the things.

smashed avocado / over-easy egg / za’atar

ricotta / sliced fresh figs honey / cinnamon

Description
This simple sweet potato toast is the perfect alternative to bread. Vegan and gluten-free, it’s just waiting for toppings for a healthy breakfast.
Ingredients
- 1 large sweet potato
- toppings (see post for ideas)
Instructions
- Slice the sweet potato lengthwise into 1/4-inch thick slices.
- Toast the sweet potato slices in a toaster on high, about 5 minutes. You might need to keep toasting a couple of times until the sweet potato is cooked through.
- Top with desired toppings (see post for ideas).
