From smoothie bowls to salads, we’re pretty obsessed with toppings. Which is why we love the toast trend. But starting our day with a big slice of bread doesn’t always feel the healthiest. Enter: sweet potato toast. Made from simple slices of sweet potato, they’re blank canvases just waiting for you to top them with all the things.
SOME OF OUR FAVORITE COMBINATIONS
Peanut Butter Banana
peanut butter / sliced banana
coconut flakes / cinnamon
tahini paste / sliced peaches
maple syrup / sesame seeds
Pear and Goat Cheese
goat cheese / honey
sliced pears / pine nuts
Avocado Za’atar Egg
smashed avocado / over-easy egg
ricotta / sliced fresh figs
honey / cinnamon
grassfed butter / maple syrup
toasted pecans / cinnamon
- 1 large sweet potato
- toppings (see post for ideas)
- Slice the sweet potato lengthwise into ¼ inch thick slices.
- Toast the sweet potato slices in a toaster on high, about 5 minutes. You might need to keep toasting a couple of times until the sweet potato is cooked through.
