Welcome to this week’s meal plan! If you haven’t tried it yet, you could always skip the plan below and do the totally done-for-you 3-Day New Year Reset this week instead.
Meal 01
Maple and Miso Sheet-Pan Salmon. I love sheet pan meals and love wild salmon (omega-3s), so I’m excited to try this recipe this week. I’ll probably serve it with my favorite short-grain brown rice or cauliflower rice (or a mix ;))
Meal 02
Baked Polenta Margherita Pizzas. This is a new recipe on the site this week! It’s so easy that it hardly even needs a recipe – simply slice and bake precooked polenta, top with tomato sauce, mozzarella (dairy-free? try Mikoyos mozzarella), and basil, and serve with zucchini noodles or a simple side salad. Meal 03
Anything Curry. I have an open can of coconut milk in my fridge, so I’m going to make this easy anything curry! I’ll probably use tofu and frozen broccoli, but… anything goes! Get the recipe here.
Meal 04
Sheet Pan Brussels Sprouts. This is a recipe I’m (still) testing so I don’t have a link to the exact recipe I’m making (yet!) – but here’s a good sheet pan brussels sprouts recipe for you to try!
Simple Prep Session
Instead of prepping full meals ahead of time, I like to prep components. This makes “meal prep” way less overwhelming but you’ll still get the weeknight time-saving benefits. The graphic above shows what components I’m making ahead for each meal! I usually do this Sunday or Monday nights.
