This healthy no-bake apple crisp is a delicious, easy fall dessert, perfect for the holidays. Made with apples sautéed with spices and coconut oil and topped with a crunchy date and walnut topping. Naturally sweetened, vegan, paleo, and dairy-free.

- 1 apple, cored and diced into 1/2-inch cubes
- 1 teaspoon pumpkin pie spice or cinnamon, divided
- 1/2 small lemon, juiced
- sea salt, divided
- 2 teaspoons coconut oil
- 2 Medjool dates, pitted
- 1/4 cup roasted walnuts
- coconut whipped cream, optional
Instructions
- Make the filling. Add the diced apple to a small bowl and mix with 1/2 teaspoon pumpkin pie spice or cinnamon, the lemon juice, and a pinch of sea salt. Heat 2 teaspoons coconut oil in a small skillet. Add the apple mixture and sauté until apples begin to soften, about 5 minutes.
- Meanwhile, make the crisp. Finely chop two pitted Medjool dates and 1/4 cup roasted walnuts together on a cutting board. Add 1/2 teaspoon pumpkin pie spice and a pinch of sea salt and chop together again. Spread the crisp mixture over the skillet with the apples and serve (with some coconut whipped cream, if desired!). If you prefer, you can broil the topping for about a minute to warm through.
