The perfect healthy fall snack. Vegan, gluten-free, and paleo, these energy bites come together in minutes and are great for travel.
Ingredients

- 1 cup pecans, toasted (learn how to toast them here)
- 1 cup pitted Medjool dates
- 1/3 cup pure pumpkin purée
- 1/2 cup unsweetened coconut flakes, plus more for rolling
- 1 teaspoon pure vanilla extract
- 1 1/2 teaspoons pumpkin pie spice
- sea salt to taste
Instructions
- Make the mixture. Place the toasted pecans into a food processor and pulse until finely ground. Add in the rest of the ingredients and pulse until combined. Adjust the spices to taste, adding more salt if necessary. Allow the mixture to chill in the refrigerator for 30 minutes.

Roll into balls. Use your hands to form the dough into 10 balls. Put some extra unsweetened coconut flakes in a shallow bowl and then roll each ball in the flakes until coated. Store in the refrigerator or freezer in an air-tight container.
