It’s no secret that I think cooking is more fun than baking. But… I still want my fall treat fix from time to time. Enter: no-bake desserts! Like these apple pie energy bites, that are healthy enough to be breakfast, a post-workout snack, or an afternoon snack.
Made with just a few simple, #realfood ingredients, these come together in 5 minutes or less. Make them ahead for the week (easy meal prep!) or whenever an apple pie craving strikes.
Apple Pie Energy Bites Ingredients
These apple pie energy bites are made with just a few simple ingredients: pecans, walnuts, dried apples, dates, vanilla extract, cinnamon, and salt. Here are a few notes.
Nuts. I used raw pecans and walnuts (unroasted and unsalted) for this recipe. If using salted nuts, simply use less salt than the recipe calls for.
Dried Apples. I get these from Trader Joe’s, but you can also find them online here. You want dried, dehydrated apples, not freeze-dried apple chips.
Dates. These are my go-to organic Medjool dates.
What Equipment You Need to Make Apple Pie Energy Bites
The only thing you need to make these apple pie energy bites is a food processor! Though you might be able to make these in a blender, a food processor will make the process much quicker and easier.

Apple pie energy bites – the perfect healthy fall snack! Vegan, gluten-free, and paleo, easy to make, and naturally date and apple-sweetened.
Ingredients
- 1/2 cup raw pecans
- 1/2 cup raw walnuts
- 1 packed cup dried apple slices (I get them from Trader Joe’s)
- 1/4 cup pitted Medjool dates (about 3)
- 1 teaspoon vanilla extract
- 2 teaspoons cinnamon
- 1/8–1/4 teaspoon salt
Instructions
- Make the mixture. Add the ingredients to a food processor and pulse until combined and the mixture begins sticking together. This will take a couple of minutes, so be patient! You may need to scrape the sides down with a spatula occasionally. Add more salt to taste, if necessary.
- Roll into balls. Use your hands to form the dough into 12-14 balls (about 1 heaping tablespoon each). Store in the refrigerator or freezer in an airtight container.
