Coconut cauliflower rice is an easy, healthy side dish and satisfying rice alternative. Made with cilantro and lime. Paleo, vegan, and low-carb.
Frozen cauliflower rice is a staple in my house. It’s the perfect base or side dish for quick and easy weeknight meals because it takes less than 15 minutes to make and is a blank slate for flavors; just add herbs, spices, or a sauce and you’re good to go. Also: extra vegetables are always welcome.
This low-carb coconut cauliflower rice is hands down my favorite basic cauliflower rice recipe because the richness of the coconut milk makes it more substantial (read: a more worthy rice substitute, in my opinion).
To this version, I added cilantro and lime but if you’re not a cilantro person, simply omit it! The coconut cauliflower rice will still be satisfying and versatile.
Where to Buy Cauliflower Rice
In another life, I made my own cauliflower rice. You can totally do this (it’s easy!), but now I usually buy frozen cauliflower rice to save time.
You can find cauliflower rice in the freezer aisle of most US supermarkets. Trader Joe’s sells both fresh and frozen cauliflower rice (their frozen version is organic and only $1.99, which is the one I get!), so check both the produce and freezer aisles.
Green Giant and Birds Eye both sell frozen cauliflower rice. Whole Foods Market’s 365 brand sells organic cauliflower rice in the freezer aisle of many Whole Foods Market stores. I’ve also seen organic cauliflower rice in the freezer aisle of Costco.
Coconut Milk Brands
I like to use full-fat coconut milk in this recipe. Here are my three favorites, listed cheapest to most expensive.
- Trader Joe’s Organic Full-Fat Coconut Milk
- Whole Foods Market 365 Organic Full-Fat Coconut Milk
- Native Forest Organic Full-Fat Coconut Milk
Note that whichever brand you choose, you must shake the can before opening and measuring so that the coconut cream and coconut water are well incorporated.

Description
Coconut cauliflower rice is an easy, healthy side dish and satisfying rice alternative. Made with cilantro and lime. Paleo, vegan, and low-carb.
Ingredients
- 2 garlic cloves, minced
- 2 tablespoons minced cilantro
- 1 teaspoon coconut oil
- 12-oz bag frozen riced cauliflower
- 3 tablespoons full-fat coconut milk (shake the can before opening and measuring)
- 1/2 lime, juiced
- salt, to taste
Instructions
- Mince the garlic and cilantro and set aside.
- Over medium-high heat, melt 1 teaspoon of coconut oil in a large cast-iron or non-stick skillet.
- Add in the frozen riced cauliflower. Cook until thawed, about 5 minutes, stirring occasionally.
- Stir in 3 tablespoons coconut milk, the minced garlic cloves, the juice of half a lime, and a big pinch of salt and cook a few minutes more.
- Once most of the liquid has evaporated, stir in the cilantro and remove from heat. Season with more salt, to taste.
