Two of my favorite foods combined = avocado hummus! This recipe is a spin on an easy hummus recipe, with avocado in the place of some of the tahini. The bright green color is from the avocado and a handful of baby spinach (extra nutrients! 👊🏼) and is great as a dip for veggies, pita chips, tortilla chips (hi, Super Bowl Sunday), and/or a spread for sandwiches and wraps.

You’ll only need a few simple ingredients to make this avocado hummus – canned chickpeas, tahini, extra virgin olive oil, lemon, cumin, and garlic (all capsule pantry staples) plus one avocado and a handful of baby spinach. Simply add everything to a food processor and… that’s it! I topped it with some extra olive oil, sesame seeds, and cilantro but the garnish is totally optional.

A note about food processors. If you don’t have a food processor, using a blender should work (add the more liquid ingredients first)! That being said, I’ve found that using a blender for things like hummus, pesto, and energy bars/bites can be frustrating while a food processor whips up these foods with ease. Here’s the one I’ve had for years (…I can’t find the link on Amazon right now, but this one is very similar).

While serving this avocado hummus with vegetables is certainly a great and healthy route, I have a thing for tortilla chips. I love Siete chips for a grain-free option, Garden of Eatin’ blue chips, and pretty much any chips by Late July.

Ingredients

Scale
  • 1 garlic clove
  • 1 (15-oz) can of chickpeas, drained and rinsed
  • 1 ripe avocado, pit removed and flesh scooped out
  • 1 packed cup of baby spinach
  • 1 lemon, juiced
  • 1/4 cup tahini paste
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1–4 tablespoons cold water, if needed

Instructions

  1. Add the garlic clove to a food processor and process until chopped.
  2. Add the remaining ingredients, except for the water, to the food processor and process until smooth and creamy, stopping to scrape down the sides a few times if needed.
  3. If the hummus seems too thick (this will depend on the consistency of the tahini paste you use!), add water to the food processor, 1 tablespoon at a time, processing after each tablespoon until the desired consistency is reached. Add more salt to taste, if needed.
  4. Transfer the hummus to a bowl (or airtight container to save for later) and serve with cut vegetables, pita chips, tortilla chips, etc. or use on sandwiches or wraps. Enjoy!
